In May of this year, Ernie was a sushi chef who had just begun selling ramen kits to supplement his income due to his hours being cut by Covid-19. Fast forward 5 months later, he is in the final stages of opening Modesto's first craft ramen shop. In this episode, I wanted to catch up with Ernie and see how he's gone from kits to his own shop in such a short time. Covid has been incredibly difficult for so many in the restaurant industry.
